I’ve been experimenting with a banana loaf recipe and now I think I’ve got it just right. It’s a great way of using up old bananas.
Pre heat oven to 170C. 3 OR 4 ripe bananas mashed up. Mix in 1/3 cup of melted butter. Add 1 cup of demerar sugar, 1 beaten egg, 1 tsp of vanilla essence, 1 tsp of baking power, 1 1/2 cup of self raising flower, 1 good measure of nutmeg to your own taste, 1 good measure of cinnamon to your own taste. Mix it all together with a wooden spoon. Pour into lined or buttered loaf tin then put in oven for around 45 minutes.
Here was today’s loaf. It was exceedingly yummy. I specially love eating it off vintage china plates and drinking my tea from a vintage china cup!!!

Ooh this looks delicious – I am a bit bored of my current banana bread recipe which needs choc chips to liven it up but I love nutmeg so I think I will give your recipe a whirl next time I have some bananas that need using.
Kate, I should mention that the recipe comes with a warning. Once made, you will want to eat the whole banana loaf all in one go!!! Seriously, I just can’t stop eating it or pass the tin without having some.
